Having travelled the likes of Japan, Sweden, France and Morocco, Carlo calls on expansive international experience to source ideas, gather knowledge and create dishes that exist beyond traditional gastronomy and which are unfazed by the confines of location.
The Amethyst experience takes diners on a journey through global cuisine, embarking on multiple stops along the way to discover the many different flavours and cultures of the world.
Not afraid of breaking the rules, Carlo experiments with these flavour profiles, presenting diners with a map of the world that encompasses all of the ingredients the Chef has grown to love. His inimitable cooking style relies on marrying these together for a multi-sensory dining experience, allowing guests to truly understand the culture behind each ingredient and Carlo’s vision.
