Our talented Chef Director, Simon Haigh, has cultivated 20+ years’ experience in the industry and has worked in some of the finest hotel restaurants in the world, Simon has an enthusiasm for cooking with seasonal produce and the finest local ingredients.
Having earned a Michelin star on more than one occasion he has returned to the kitchen to inspire and enthuse the team to these levels once more. Simon’s passion for food is unmistakable, he describes his cooking ethos as seasonal, well-sourced and flavour driven.
“What I like most about my job is the diversity of what we do and the fact you never stop learning,” says Simon. “For me, the main thing is to have a passion for food, if you have this you won’t work a day in your life, that’s not to say it won’t be hard but it will be easier and the hurdles you have to jump will not seem as bad.”
