We want to be able to cook food without guilt and this means, as with our winemakers, dealing directly with growers and producers. They understand how to make the most of seasonal produce, at the same time minimizing the impact on our environment. We firmly believe our suppliers, whether it be the cheeky fifth generation butcher in Chipping Barnet, artisan Hampshire coffee roaster who we spent hours, wide-eyed, designing a blend with, the nearby Billingsgate fishermen, or mighty successful Greenwich-based brewer, care as much about provenance and taste as we do.
